Emerald Smashed Avo

This has consistently been one of my favourite snacks that’s perfect for any time of the day. It is such an easy and delicious recipe that you can use as a spread or a dip, with crackers, bread, veggies, rice bowl or whatever you feel like on the day. All you need to do is mix 2 ingredients together.


RECIPE

Feeds 2-4

  • 2 ea Ripe Avocados

  • 3 tbs Emerald Scallion Ginger oil

  • Salt + Pepper to taste (if needed)

INSTRUCTIONS

  • Cut avocados in half and remove the seed

  • Score the avocado with a knife in a criss cross motion, making roughly 1-2cm cubes. Careful not to cut through the skin

  • Scoop out avocado with a spoon, it should come out all diced up already

  • In a bowl, vigorously mix diced avocado with Emerald Scallion Ginger oil. Alternatively, mash everything up with a fork.

Tip-

The more you mix the avocado, the more creamy it will become. If you like some texture and more cubes of avocado, simply mix it less and more gently.
